I am really enjoying my adventures into the land of vegetarianism and I have worked out what to eat and when to eat it. I thought I would share
Complex Carbs - 6 servings in 5 meals
1. 30 g oats
2. 30g cereal
3. 2 slices pumpkin seed bread (2 serves so I can have a sandwich at lunch)
4. 1/2 cup rice
5. 1/2 cup pasta
Protein - 6 serves in 6 meals
1. 1 scoop ladybird crunch
2. 1 scoop soy protein powder
3. 100g tofu
4. 1/2 cup beans
5. 1 egg or 2 egg whites
6. 30g nuts
Dairy - 2 serves in 2 meals
1. 1 cup soy milk
2. 1 cup soy yogurt
Fruit and Vegetables - 6 serves in 5 meals
1. 1 banana
2. 1/2 cup chopped apple
3. 1 cup veges
4. 1 cup veges
5. 2 cup veges
When you add it all up I hit 1950 calories, 45g fat, 125g protein, 260g carbs, 44g fibre and 900mg of calcium. Sounds pretty balanced and healthy to me, I get all the complementary amino acids in one day and I can mix the combinations around in all different ways. I love this way of eating!

ReplyDeleteHave you tried Quinoa? I don't know if you can find that in your country but it is an extremely healthy grain because of its high protein and because it has all the amino acids. I see you are including dairy, Cottage cheese is another food that has important amino acids. If you don't like eating it you can put some in with your shakes. And I'm sure you know that spinach is an athletic vegetarians' best friend!

If you're interested...lentils are a good source of protein-mixed with ginger and soy yogurt, tempeh is great in stir-fry, TVP (textured vegetable protein) works superb as a mince meat...meat patties, enchiladas, sphagehetti etc. I went vegetarian for a year a few years back and still do vegetarian meals about once a week.
