Ratatouille Recipe

As requested by "Hilltop Dreamer" here is the recipe

Serves 8-12

4 medium eggplants, cubed but not peeled
6 large zucchini, sliced
4 red capsicum, sliced
8 tomatoes, sliced
4 onions, sliced
4 cloves garlic, crushed
salt and pepper to taste
1 cup oil

Place onions in the Slow Cooker first then add remaining ingredients. Cover and cook on low for 8-9 hours. The vegetables should be soft but not mushy.

You need to cut the veges quite small to fit all this in a 6 litre cooker.

I cooked it with oil the first time but found it tasted very oily to me [I eat low fat]. The second time I replaced the oil with water but it didn't taste half as nice. There is a happy medium in there somewhere - maybe no water and halve the oil? Will try next time.
